I have no idea why this pie has the name it does. According to Wikipedia, it might be because the molasses attracted flies that then had to be "shooed away.". But whatever the reason, this pie is just darn good. We can all agree on that.
Now, there are two ways to eat shoo fly pie: wet bottom and dry bottom. Or, more accurately, wet bottom and wrong, since dry bottom is a cake, not a pie. I suppose, if you wanted to eat a molasses cake, it would be a perfectly tasty dish. But for a pie, wet bottom is the only way to go.
Ingredient List
1 cup flour
1/2 cup brown sugar
2 T butter or margarine (the molasses is strong enough that it doesn't actually matter which one you use)
1 cup molasses
1 egg, slightly beaten
3/4 cup cold water
1 tsp baking soda, dissolved in 1/4 cup hot water
1 unbaked 9" pie shell
Preheat oven to 375.
In a medium-sized bowl, combine flour, brown sugar, and butter. Cut together, using a pastry blender (or two table knives, if you're like me and don't own a pastry blender). Measure out 1/2 cup of crumbs and set aside.
In a separate bowl, combine molasses, egg, cold water, and baking soda solution. It helps if you measure out the molasses first, then the cold water, as the water will rinse out the last of the molasses out of the measuring cup. Add crumb mixture (the part that you didn't measure out), and beat together with he molasses mixture. Pour into the pie shell. Sprinkle with remaining 1/2 cup of crumbs.
Bake 30-35 minutes. Allow to cool before serving, as it will stick together better after the molasses has allowed to cool.
