I promised last night after I posted the gingerbread that I would post the recipe for the lemon curd today. So here it is. You will note that this picture looks slightly different than the one last night. That's because this picture was taken this morning after it had sat in the refrigerator all night. And while this curd will probably never be as thick as the kind you buy in the store, it does thicken up as it cools. Also, this is not interchangeable with the type of curd that you would put into a lemon meringue pie. This curd is strictly the type you would eat as a sauce.
Ingredient List
3/4 cup lemon juice (about the amount in one lemon)
1 T grated lemon zest (optional)
3/4 cup sugar
3 eggs
1/2 cup butter, cubed
In a mixing bowl, cream together the butter and sugar well. Add eggs, one at a time, mixing well after each one. Transfer the whole shebang to a saucepan and add juice and zest. Cook over medium heat, stirring slowly until the curd is just beginning to simmer and is thick enough that you can see marks from your whisk. This will take about 5-6 minutes. Be careful that it doesn't burn.
Allow to cool slightly before serving. Eat with gingerbread, blueberry muffins, as a dip for gingersnaps, or just with a spoon straight out of the container!
