Since one cannot technically call this a casserole -- even though it is one -- because sweet potato casserole is made with brown sugar, butter, and mini marshmallows and is served at the holidays. And it isn't really a hash, either, because the potatoes haven't been grated. So it's a bake. And it's a pretty good one too. The flavors all work together well, and it makes pretty much the perfect dish. I thought at first that it probably could use some onion as well, but decided later that it wasn't really all that necessary. Although you could certainly add one if you liked.
Ingredient List
1 lb sausage
2 medium sweet potatoes
3 medium apples, peeled and sliced
2 T sugar
1 T flour
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 cup water
Preheat oven to 375. Nuke the sweet potatoes until they are just barely soft (or you could skip this step, but I find that sweet potatoes are much easier to handle when they are warm). While the potatoes are cooling (because you don't want to handle the potatoes while they are hot), brown the sausage. Break up any large pieces, and drain off any excess fat. Dice the sweet potatoes into bite size chunks.
In a 2 quart casserole dish, combine apple, sweet potatoes, and browned sausage. In a separate bowl, combine sugar, flour, cinnamon, and salt. Add water to make a paste, then pour the whole thing over the sausage. Cover and bake 50-60 minutes, or until the potatoes and apples are soft.
