I decided to make a little something for breakfast this morning, so after I finished the sweet potatoes from last night, I started a batch of muffins. This is a pretty basic recipe. It's flavored with the brown sugar more than with anything else. The recipe calls for chopped nuts for the topping, and since I didn't happen to have any on hand, I omitted them. But I've included the nuts in the directions here, in case anyone desires them.
Obviously, if you wished to include blueberries, you could certainly add them as well.
Ingredient List
1 3/4 cup all purpose flour
1/3 cup brown sugar
2 tsp baking powder
1/4 tsp salt
1 egg
3/4 cup milk
1/4 cup oil
For streusel topping:
3 T flour
3 T brown sugar
1/4 tsp cinnamon
2 T butter
2 T chopped nuts
Preheat oven to 400. Grease 12 muffin cups (or line them with paper).
In a medium bowl, combine flour, sugar, baking powder, and salt. Make a well in the center and set aside. In a smaller bowl, beat egg and combine it with milk and oil. Add all at once to the flour mixture. Stir just until moistened. The batter should be lumpy. If using blueberries, add 1 cup at this time.
Prepare streusel as follows: combine flour, brown sugar, and cinnamon. Cut in butter until mixture resembles coarse crumbs. Stir in nuts.
Spoon batter into muffin cups, filling each about 2/3 full. Sprinkle streusel over top of the batter. Bake for 18-20 minutes, or until they pass the toothpick test. Cool for 5 minutes before removing them from the muffin tins. They're best if they're served a little warm with some milk.
If you wanted to make banana nut muffins, reduce the milk to 1/2 cup. Stir 1 mashed banana and 1/2 cup chopped nuts into the mix when you combine the flour and egg mixtures. Do NOT use paper linings in the muffin tins.
