New recipe tonight. I saw this one and decided it looked yummy. And with this one, just like the soup last night, the most difficult thing about the whole thing was the mise en place. Which means there usually isn't a lot of multi-tasking that needs to be done. And that's ALWAYS a good thing. It's not overly sweet, either, which means it's a plus with Beast, as he prefers savory flavors in his entrées.
Ingredient List
1/2 cup flour
1 1/2 tsp. salt, divided
1/4 tsp. pepper
2 lb chicken tenders
3 T vegetable oil
1 cup chopped onion
1/4 cup each chopped green and sweet red pepper
3 garlic cloves, minced
3 cups chicken broth
1/2 tsp. ground ginger
In a shallow dish, combine flour, black pepper, and 1 tsp. salt. Place chicken in and turn to coat. Set aside any leftover flour. Heat oil in a large skillet and fry chicken, a few pieces at a time, until browned. Remove the chicken from skillet and set aside.
Add the onion, peppers, and garlic to the drippings and sauce until tender. Pour out 1/2 cup chicken broth and set aside. Stir remaining broth, ginger, and salt into vegetable mixture. Add chicken, cover tightly, and simmer . While it is cooking, combine the 1/2 cup broth with the remaining flour dregs left from coating the chicken and stir until smooth. After the chicken has simmered for 45 minutes, stir in the flour mixture. Bring to a boil and cook for an additional 2 minutes, or until thickened.
