As promised, here is the recipe for pepper soup. This recipe intrigued me when I first came across it a couple of weeks ago, so I knew I had to give it a try. And I was really pleased with the result. Even Beast, who isn't all that fond of soup, declared it good. And it was pretty simple and easy to make, too, so all the better!
Ingredient List
1 lb ground beef
1 each large green, sweet red, and yellow pepper, chopped
1 large onion, chopped
1 46 oz can vegetable juice (I used V8)
1 tsp. cayenne pepper
salt and pepper to taste
In a large saucepan, combine beef, peppers, and onion over medium heat until the meat is no longer pink. Drain off any fat. Add the remaining ingredients and bring to a boil. Reduce heat and simmer, uncovered, for about 15 minutes, or until the vegetables are tender. Serve with warm biscuits and butter.
That's it. See? Easy-peasy. Seriously, the hardest part was the mise en place. And when that's the case, you know it's an easy recipe.
