Sometimes my choice of meal comes when I'm flipping through a cookbook, looking for inspiration. And sometimes, my choice of meal comes when I have looked at what I have in the refrigerator and realized that I forgot to thaw out the meat I had planned,, and now have to plan something completely different around another food. Tonight's recipe falls in the latter category. I knew I had a pound of ground beef in the refrigerator, but didn't realize that Beast and I need to go grocery shopping. And as such, it took a while before I was able to find a recipe that we had the ingredients for.
Despite the name, it really isn't all that difficult to make. The hardest part was figuring out when to do what. I know -- you heard me talk about the mise en place the past two recipes, so you figure you do all the prep work in advance, right? Wrong. This is a two step dish. So the tomatoes and the cheese don't need to be touched until halfway through the cooking process.
So, with that in mind, the Ingredient List
1 lb ground beef
1 small onion, chopped
1 sweet red pepper, chopped
1/2 tsp. salt
1/4 tsp. black pepper
1 1/2 cups milk
3 eggs
3/4 cup Bisquick
2 tomatoes, roughly diced
1 cup shredded Cheddar cheese
Over medium heat, combine beef, onion, and red pepper and cook until beef is brown. Drain, and stir in salt and pepper. Spread the mixture out onto a greased 9 or 10 inch pie plate. In a large mixing bowl, beat milk, eggs, and Bisquick until smooth (about a minute with a hand beater). Pour into the plate over the beef mixture. Bake 25 minutes. Top with tomatoes, and sprinkle with cheese, then return it to the oven for about another 5-8 minutes. Let it cool for about 5 minutes before serving.
