We were out of bread today, and Beast asked me to make some. And just like with any food, bread tastes so much better when you make it yourself. More to the point, when you make homemade bread, you end up with a house that smells SOOO good. Because there is very little that smells better than fresh homemade bread.
Now, when I make bread, I use a bread machine. But I figured not everyone has a bread machine, so the recipe here is made without one. But I do recommend a big KitchenAid. Honestly, I know people made bread prior to the invention of bread machines and KitchenAids, but I have no idea how.
Ingredient List
3-3 1/2 cups all purpose flour
1 package active dry yeast
1 3/4 cups water
1/3 cup packed brown sugar
3 T butter or margarine
1 1/4 tsp salt
2 cups whole wheat flour
In a large mixing bowl, combine 2 cups of AP flour and yeast and set aside. In a medium saucepan, heat water, sugar, butter, and salt just until warm (the butter should be almost melting at this point). Add water mixture to flour mixture. Beat on low to medium speed for about 30 seconds, then on high for about 3 minutes.
With a spoon, stir in whole wheat flour and as much remaining white flour as you can. Turn dough out onto a lightly floured surface and knead in enough of the remaining white flour to make a stiff dough that is not sticky, and is smooth and elastic, about 6-8 minutes. Shape the dough into a ball and place in a lightly greased bowl, turning once to grease the entire surface of the ball. Cover and allow to rise in a warm place until double in size, 1-2 hours.
Punch the dough down and grease a loaf pan. (Or two loaf pans if you decide it isn't going to fit into one., but I've never had a problem with it fitting into one 8*8*2 pan.) Shape the dough into the proper loaf shape and place in pan and let rise again for about 30-45 minutes. Preheat the oven to 375 while the dough is resting.
Bake 35-40 minutes, or until the bread sounds hollow when it's tapped. Immediately remove the bread from the pan and allow it to cool on a rack.
