This wasn't the original name for this recipe. But the original name seemed so bland and boring, so I decided to make it a little bit more creative. This is another slow cooker dish, which means minimal preparation. Just like the one from the other day, with this one, it's just a matter of dumping everything into the pot and walking away. But unlike the one with the honey sauce, this one I would probably make again. The chicken turned out tenderer, and the flavor was better.
Ingredient List
2 lb chicken
1 15 oz can black beans, drained
1 15 oz can corn, drained
1 15 oz jar salsa, any kind
1 8 oz package cream cheese
Place chicken into the slow cooker and pour the black beans, corn, and salsa on top. Cook on low for 7-9 hours, until the chicken starts to fall apart. Shortly before serving, place the cream cheese on top and let it sit for about half an hour. Serve with rice.
And that's it. Another one of the idiot proof recipes. (Although, now that I've said it, someone will come along and find some way to mess it up. A smarter idiot, I suppose). This recipe gives about three or four meals worth, so it's good for a couple of days. Another plus :).
