So this isn't the most creative of names. It's more like an improvised mac and cheese than a pie. But it is what the recipe named it, so we'll go with it for now. It's pretty easy to put together, and it was good enough to use up the last of the summer tomatoes :). If I were to make it again, I might make it more like an actual mac and cheese, and stir a little bit of the cheese in with the noodles before doing anything else. But it's pretty yummy regardless.And you end up with only a few dishes to clean. Yay!
Ingredient List
1 cup macaroni noodles, cooked and drained according to directions
5-6 tomatoes, chopped
1 cup shredded cheddar cheese
1/2 lb ground beef or sausage (optional)
1/4 cup bread crumbs
Salt and pepper to taste
Place the tomatoes into a medium sized sauce pan with about a quarter cup of water. Heat on high, until they begin to boil, then reduce heat to medium and cook until soft and mushy. While that is happening, preheat the oven to 350, and pour the macaroni into a pie dish. Arrange the noodles so that they cover the bottom and sides of the pie pan rather than heaped in the middle. If including meat, brown it over medium-high heat until it is brown and crumbly.
Remove the tomatoes from the heat and pour them on top of the noodles. Add the meat on top and sprinkle with salt and pepper. Cover with the cheese and bread crumbs.
Bake for about 20 minutes, or until the cheese is melted, and the crumbs are completely browned. Allow to cool slightly before serving.
