Seriously, who doesn't love fettuccine Alfredo? It might be one of the worst pasta dishes out there for your health, but it's SO GOOD. And it's even better when you make the Alfredo sauce yourself. Sure, you can go to the grocery store and pick up a jar of the stuff. But any food is better when you make it yourself from scratch.
I came across this recipe for Alfredo sauce about two weeks ago and decided to give it a try. The instant Beast took a bite, he immediately turned to me and said, "You MUST make more of this." The original recipe called for shrimp, and as you can see from the picture, I did chicken this time around. But play around with your protein. Try it with shrimp one day and chicken the next and see which you prefer! You could even try it without any meat at all -- although I think the dish lacks something when you do.
Ingredient List
3 T butter
1/2 cup diced onion
1 red bell pepper, cored, seeded, and diced
1 pound peeled raw shrimp
1 tsp salt
1 tsp ground black pepper
1 T Old Bay seasoning
1 T minced garlic
3 cups loosely packed raw spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
8 oz fettuccine noodles, cooked.
Melt butter over medium heat. Add onion and cook until softened, about 3-4 minutes. Add the next five ingredients (red pepper, shrimp, salt, black pepper, and Old Bay). Cook, stirring occasionally, until the shrimp are all curled up and pink (about 4-5 minutes).
Add garlic and spinach to the pan and cook for 1 minute, or until the spinach has all shriveled up. Add the cream and cheese, and reduce heat to low. Continue cooking for another 3-4 minutes, stirring occasionally, until the sauce just begins to thicken.
Pour the sauce onto the noodles and stir until well combined. Serve warm.
