My parents gave me a whole bunch of slow cooked recipes for Christmas, and this is the first to be tried out. I don't know about it, though. Despite the fact that it sounded really good on paper, I'm not sure I will make it again. Beast deemed it to be....okay...., and it was a lot of work for a slow cooked meal. But the flavors were good! So if you don't mind the prep work involved, I would say go for it.
(I also omitted the mushrooms, because I'm not a fan of them. But don't let that stop you from including them in yours.)
Ingredient List
1 1/2 lb boneless, skinless chicken tenders
1/2 tsp salt
1/4 tsp black pepper
3T olive oil
1 large yellow onion, chopped
2 cups chopped bell pepper
10 oz sliced baby Portobello mushrooms
3 cups chopped tomatoes
1 cup low sodium chicken broth
6 T low sodium tomato paste
1/4 cup balsamic vinegar
4 cloves garlic, minced
2 tsp. dried oregano
3/4 tsp. red pepper
1-2 tsp rosemary
Parmesan cheese
1/4 cup chopped basil
Angel hair pasta
Sprinkle chicken with salt and black pepper and saute them in batches in the olive oil a large nonstick skillet. Cook for about 1 to 2 minutes on each side, or until lightly browned, using about 1 T of oil per batch of chicken. Transfer to the slow cooker.
Add onion, peppers, mushrooms, tomatoes, broth, paste, vinegar, garlic, oregano, and red pepper to the slow cooker. Stir to combine and sprinkle the rosemary on top. Cover and cook on low for 6-8 hours.
In a separate pot, prepare the angel hair as directed. Spoon the chicken over the pasta to serve and sprinkle with Parmesan cheese and basil.
