Shepherd's pie is one of those ultimate comfort foods. It's warm and cheesy and fattening, all pluses when hoping for some comfort. Also, since it includes corn, which is technically a veggie, you could probably get away with saying it's "healthy," even though it isn't in any way. Plus, it's quick and easy to make, and you only end up with one dish on the table.
Ingredient List
1 1/2 lb ground beef
1 12 oz can of corn, drained
1 12 oz can of turkey or chicken gravy
1-1 1/2 cups shredded cheese
3 cups mashed potatoes
Over medium-high heat, brown the beef in a large sauce pan. When the meat is almost brown, add the gravy and the corn and stir to mix it up. Transfer the meat mixture to an 8*8 baking pan, and stir in about a handful of the shredded cheese. Set aside and preheat the broiler to high (this will not take long).
Prepare the mashed potatoes. I cheat and use the instant flakes, because they take less time. I use the proportions and ingredients that are on the box. For the amount of pie that will fit into an 8*8 pan, I make about four servings.
Carefully spread the mashed potatoes over the meat mixture, making sure that the entire dish is covered. It helps if the potatoes are a little creamy, as this allows them to spread a little bit easier. Once the entire dish has been smothered with the potatoes, sprinkle the rest of the shredded cheese on top.
Place the dish under the broiler for about five minutes, or until the cheese is melted and has started to turn golden brown. Make sure it doesn't burn or get over brown. Remove from the oven and serve warm.
