This isn't the best of pictures -- the meatloaf sort of fell apart as I was transferring it to my plate -- but it's meatloaf. It doesn't rely on being beautiful or aesthetically pleasing. Meatloaf is like Shepherd's pie or macaroni and cheese. It's comfort food. It's appealing because it's warm and simple and requires your hands to get dirty to make it. Meatloaf isn't anything that we ate a whole bunch of when I was younger, but I was hungry for it this week, and it's yummy. So two out of three ain't bad.
(I promise that is the last time I will make that statement here.)
Ingredient List
1 1/2 lb ground beef
1 egg
1 medium onion, chopped
1 cup milk
1 cup dried bread crumbs (or cracker crumbs)
Salt and pepper to taste
For the sauce
2 T brown sugar
2 T mustard
1/3 cup ketchup
Preheat the oven to 350. In a large mixing bowl, combine the beef, egg, onion, milk, and crumbs. (Seriously, use your hands to do this. It'll work better and be so much more satisfying.). When everything is well combined and all mushed together, season with salt and pepper and place it into a lightly greased 5*9 loaf pan.
In a separate small bowl, combine the sugar, mustard, and ketchup. Mix well and spread it over the meatloaf. Bake for about one hour.
Upon removing it from the oven, allow it to cool for about five minutes before serving it while you finish up any veggies or starch. I ate mine with some steamed broccoli and mashed potatoes.
