Chicken divan is one of those perfect casseroles. It's pretty much a balanced meal in and of itself -- chicken, rice, cheese, broccoli. My mother discovered a recipe for it when I was in high school, and it very quickly became one of the family favorites.
Sometimes, though, when you've worked all day, you come home, you REALLY don't feel like cooking. You especially don't want to stand in front of the stove for the next two hours (because, let's face it, it would probably take that long) making dinner when it is 90 degrees out. These are the days for when the slow cooker comes in handy. This particular recipe was given to me by my friend, AM. Your family or guests won't be able to tell that the dish is traditionally baked!
Ingredient list
2 lbs chicken
1 can condensed broccoli cheese soup
1 can condensed cream of chicken soup
4 T butter
2 cups grated cheddar cheese
1 cup rice, cooked
Put the first four ingredients into the slow cooker and cook on low for 8-10 hours. If desired, during the final 30 minutes of cooking, shred the chicken a little bit to allow the chicken and sauce marinate a little.
Put rice into a large serving (or casserole) dish. Pour the chicken over the rice, and top it all off with cheese. Serve immediately.
