I was in the mood for something simple and easy tonight. I need to go grocery shopping, so we're a little short on a few key foods. I was flipping through a relatively new cookbook and saw this one. It looked simple and yummy, so I decided to give it a try. It's very similar to the cornflake chicken recipe I made a few months ago, except this one contains no butter, and has a spicy kick to it.
I did make one small change, in that the recipe called for orange juice, which I didn't have, so I used lemon juice instead. Next time, I think I'll use orange. The lemon, combined with the other ingredients, caused the sauce to taste a bit like a cough drop.
Ingredient List
4 small boneless, skinless chicken tenders
1 T honey
1T orange juice
1/4 tsp. ground ginger
1/4 tsp. black pepper
3/4 cup cornflakes, crushed
1/2 tsp. dried parsley flakes (optional)
pinch ground red pepper
Preheat the oven to 350, and place chicken into a greased 8*8 baking pan. In a small bowl, combine honey, juice, ginger, and peppers. Brush or pour the mixture over the chicken.
Combine the cornflakes and parsley and sprinkle the mixture over the chicken to coat. Bake, uncovered, for 18-20 minutes, or until the chicken is tender and no longer pink.
