Again, apologies for the lack of posts lately. I made some barbecue chicken the other week (or what the recipe SAID was barbecue chicken. It ended up tasting more like chili.), but neither Beast nor I particularly enjoyed it. And really, the other things I've been eating have been repeats dishes, or ones like mac n cheese or spaghetti -- foods that don't really require a recipe.
This one has come through AllRecipes, and I think it has possibilities. It looks simple enough, and is one wear you could probably tweak it a little if you wanted -- more garlic, a little paprika -- it all depends on what seasonings you put in. And, it has bacon. How can you go wrong with bacon?
Ingredient List
6 chicken thighs or breasts
12 slices bacon
1 onion, roughly chopped
1 lb baby yellow potatoes
1 T dried chives
1 T dried basil
1 tsp garlic powder
1 tsp adobo seasoning
1 tsp black pepper
salt to taste
Wrap each piece of chicken in bacon, trying to cover as much of the chicken as possible. Place each piece into a 8*8 baking dish and sprinkle the onion over the chicken. Push the potatoes down into the spaces between the chicken and around the edge of the dish.
Combine the chives, basil, garlic, adobo seasoning, pepper, and salt and sprinkle over the chicken and potatoes. Bake at 400 for approximately one hour, or until the bacon is crisp and brown, and the potatoes are tender. Sprinkle with Parmesan cheese if so desired, and serve hot.
