As I said when posting about the applesauce a couple of weeks ago, apples are a pretty versatile fruit. I usually don't follow a recipe when making an apple pie. (Actually, scratch that. I NEVER follow a recipe when making apple pie). Apples are flexible enough that, if you accidentally add a little too much sugar or cinnamon or what-have-you, a pie will not be completely ruined.
But, that aside, here is my attempt at what I put into my apple pie. I like to use a variety of apples, because of the different ways they all took down and taste. This particular pie contains Macintosh and Jonagolds, because the grocery store happened to have a special on them.
Ingredient List
One 9-inch double pie crust
6-8 medium apples
1/4 cup brown sugar
2 T flour
1/4 tsp. ground ginger
1 tsp. cinnamon
1 T orange or lemon juice
1 T butter
If using store bought pie crust, remove the crust from the refrigerator first.
Peel, core, and slice the apples, and preheat the oven to 375. In a large bowl with a lid, combine apples, brown sugar, flour, ginger, and cinnamon. Put the lid onto the bowl and shake for about 30 seconds or so to coat the apple slices completely. Remove the lid and add the orange or lemon juice.
Arrange the bottom crust into the pie pan, and add the spiced apples. Don't worry too much if the apples heap up over the top of the pie pan, as the apples will cook down in the oven. Cut the butter into small pieces and arrange them randomly around the apples. Arrange the top crust and make a few slits to allow the steam to remove.
Bake for about 45 minutes, or until the crust is golden brown, and the filling is hot and bubbly. Allow the pie to cool slightly before serving.
