My source for the recipe (food.com) calls it "Crock Pot Cream Cheese Chicken," which, I think is really kinda boring, even though that's pretty much what it is. But whatever the proper name for this is, it's REALLY GOOD. Beast took one bite and immediately asked for more. He has demanded a repeat of the dish next week. And that's good, because this one is super easy to make. Which I'm sure you realized all ready, given that it's made in the slow cooker. I have yet to meet a slow cooked meal that was difficult to make. But I digress.
Ingredient List
3 lb chicken
1 (2/3 oz) package Italian salad dressing mix (the packets at the grocery store salad bar work great)
4 T butter, divided
1 small onion, chopped
1 garlic clove, minced
1 can condensed cream of chicken soup
1 8-oz package cream cheese
1/4 cup chicken broth
Place the chicken into the slow cooker and sprinkle the Italian dressing over the chicken. Pat with two tablespoons of the butter. Cook on low 4-6 hours.
Melt the remaining butter into a sauce pan and saute the onion and garlic until the onions are clear. Add soup, cream cheese, and broth. Stir until smooth. Add the cheese mixture to the crock pot and cook on high for an additional hour.
I recommend, during this last hour, to take the time to make your veggies and starch -- I made rice, but I bet it would be equally good with pasta or potatoes.
